Simple Sundays.... Zucchini spaghetti with ground turkey Ragu for the healthiest of noodles!!!! I am so unbelievably blessed to have a tribe of the most amazing friends worldwide. One of them, Jonathan is a part of my Singapore family and one of the singularly most positive driven men I know. He is also one of the healthiest ...making me put down that extra tub of ice cream (is my mom paying you a consultant fee? wink ) and making my favorites a tad less flabb-luous but still totally fabulous.. YUM!
In the crockpot for 3-4 hours on low goessssss:
- 1 lb ground turkey
- 1 jar spaghetti sauce (your choice)
- 1 chopped onion
- 2 minced garlic cloves
- glug of red wine
- glug of olive oil
- sprinkle of red pepper flakes
- sprinkle of basil
- lots of cracked pepper and salt to taste
Let it all hang out and do its thing.. stir occasionally. For the "pasta", zucchini directions are below but feel free to use regular pasta or whole wheat (which i find horrific).
Cut 2 zucchinis into thin strips then cut again till they look like long noodles. You can also use a peeler to create thicker noodles (whatever you prefer). Cook the "noodles" in simmering water for a couple of minutes until soft. Drain and chock with cold water so they keep some shape. Dry on paper towel then put in bowl with a tiny bit of olive oil.. top with sauce and serve!
