Simple Sundays: Pimento Cheese Egg Sandwich

Pimento eggs Benedict

 

Joanna and I were in kitchen again this morning and had the grand idea of putting pimento cheese sauce instead of hollandaise on our breakfast favorite.  Genius or horrid? Well, the color is certainly unnatural but the taste is magical. Try it and then run five miles.. Or watch the football game. 

Recipe:

Serves 2

-1 cup pimento cheese

-4 eggs

-1/4 cup milk

-2 slices of country bread, toasted

- 4 slices center cut bacon

-red pepper flakes, pepper, and salt

Instructions: 

-fry bacon till crisp and put aside

- in a saucepan, combine pimento cheese and milk. Stir and heat on low 

-to poach eggs: bring water to a simmer over low/med heat. Crack eggs and keep together by rounding with a spoon. Cook for around five minutes ...until white is cooked through and yoke is runny

-toast bread 

- assemble, season, and serve
