Simple Sundays: Leek, Bacon, and Stilton Pies


The Brits obsess over a good pie and so do I. What is there not to love about wrapping comfort food in a pastry (other than the resulting weight gain)? Now one should really make their own crust, as it is not that labor intensive and the result is flaky bliss; however, as it is Sunday and I want to spend the majority of the day watching Man City beat Man U, I have decided to take the easy route. Be sure to custom fit your filling.. if you are not a blue cheese fan, opt for Parmesan, omit the bacon, etc.. the result will be just as magical.



-1 large pie crust (unsweetened) or 6 little ones
-2 leeks, trimmed and chopped (DO NOT USE THE GREEN PART)
-4 slices bacon or pancetta, chopped
-3 large eggs, beaten
-1 cup heavy cream (can also use half and half)
-6 oz Stilton or other blue cheese, crumbled
-salt and pepper

-preheat oven to 400F
-in a frying pan, cook bacon until some fat has been released (1 min). Add leeks and cook on med heat for five minutes (or until bacon gets color). Remove from heat
-in a bowl, combine eggs, cream, cheese, salt and pepper.
-add cooled leek mixture and stir
-pour mix into pie molds and slip in the oven. Bake for 30 mins then add some time if not golden on the top.
