Munich, Germany: Warm Blue Potato Salad

When the sun comes out, Bavarians flock to beer gardens like clockwork. Some order traditional fare (sausages, pretzels,etc) on site; more bring hampers full of their favorite nibbles. The whole experience, from the silverware to sharing tables with strangers, is so civilized (till the third beer).  If ever in Munich, make it a priority to sit in the beer garden by the Chinesischer Turm (in the English Gardens- central) and grab a quick one in the Viktualienmarkt  (market) near Marienplatz.

This potato salad is the perfect side for your last few barbeques. Mayo-less, I find it lighter and more flavorful then it's American counterparts.

-2 lbs potatoes (any type that hold their shape when boiled.. I LOVE these little blue ones)
-1 large onion, finely chopped
-1 beef stock cube
-6 Tbs light vinegar
-3 strips thick cut bacon
-ground pepper and sea salt, to taste
-chives, chopped as garnish

1. Add beef stock cube to water and bring to a boil
2. Add potatoes and boil until cooked but not falling apart
3. While the potatoes boil, fry bacon.. drain on paper towels and crumble.. reserve fat in pan
4. Peel potatoes while hot (optional)
5. Add finely chopped onions to bacon grease pan.. sweat 
6. Mix vinegar and sprinkle of salt in a separate bowl. Add to bacon pan and stir (remove from heat)
7. Pour over potato mixture, stir, and let it sit in a warm place for thirty minutes
8. Decorate with chives and crispy bacon bits
