Man vs Food: Beer Butt BBQed Chicken

 

I have been out of town for the last two weeks, training for my new job. Our group has a few ladies but is mostly the loveliest collection of manly guys. I told them about the website.. which they proceeded to read. I am not sure if they got anything from it (a couple of laughs for sure-they think I am a loony toon) but I have loved hearing about their family favorites and grill achievements. John, a Georgia native, was sweet enough to share his beer butt chicken recipe. Healthy and flavorful, it is perfect way to get that protein dose for your gym routine! 

RECIPE:

-3/4 cup butter

-1 Tbsp garlic salt

-1 Tbsp paprika

-1Tbsp cumin

-salt and pepper to taste 

-1 glug olive oil

-3/4 can beer

-1 medium chicken

-charcoal and mesquite wood chips (available at the grocery store)

Directions: 

-mix all ingredients and spread over chicken 

-crack open the brew and take a couple of sips. Insert the beer can into the chicken cavity. It should be able to stand on its own.

-grill on indirect heat with a pan of water underneath chicken.. Put charcoal and mesquite wood chips (which have been soaked in water for 30 min) on the other side of the grill. You will have to add more chips halfway through the cooking process. It should take about an hour to an hour and a half total (keeping the temp around 275-300 F, 135-150 C).
