Simple Sundays: Superfood Salad with Beets, Apples, and Endive

 

After you make anything with beets, it looks like Barney was murdered in your kitchen. This superfood carries enough nutritional goodies to make the extensive clean up worth it. Beyond the antioxidants and vitamins, the wonderful World Wide Web also notes that the Greeks used the beet as an aphrodisiac... Strange choice but whatever works for you.

RECIPE:

Serves 1

-1 fresh beet, peeled and shredded

-1 tart apple, cut thinly or shredded (granny smith or Johnson)

-5 Belgian endive leaves

-crumbled goat cheese, to taste

-2 Tbsp olive oil

-1 tsp honey

-sprinkle of sea salt, a bit of cracked pepper

HOW TO: 

-combine the last three ingredients to make dressing, stir

- arrange endives on bottom of plate, toss shredded beets and apples with dressing and place on top

-garnish with goat cheese
